Science has figured out a lot of things. But there are even more things that it hasn't been able to explain.
There are a lot of people in this world who get sick and need to wait months and go through countless exams before they are correctly diagnosed. If they are ever diagnosed.
This isn't any one doctor's fault. The human body is just a really weird thing that has yet to be completely understood.
So, if you're worried that you can't give your character an odd disease or that any disease should be quickly diagnosed, give yourself a break. No one will call you out for exaggerating. Use the mystery of the human body however it fits your story.
